Helen's Vegan Pancake Recipe

It's that time of year again. Yes, that's right...shrove Tuesday, Mardi Gras, PANCAKE DAY!
I remember when I first went vegan in 2012 feeling a bit lost when it came to pancakes because the recipes rely so heavily on eggs and dairy, so after a little research, I came up with this foolproof vegan recipe that I use every year.
I really like using an egg replacement product called 'No Egg' by Orgran for recipes like this one. It's easily available online and in most health food stores. It really goes a long way and it's a great cupboard staple for all vegan cooks.
Pancakes are very versatile and can be served with sweet or savory toppings and fillings, so they make a brill option for vegan din dins any day of the year!
So here is my easy-peasy Vegan Pancake recipe...
Makes 6-8 pancakes
Ingredients
100g Plain Flour (the best quality you can afford - it really helps!)
Pinch of Salt
2 tbsp 'No Egg' egg replacer
6 tbsp Cold Water
300 ml Soya Milk
100 ml Water (you can adjust this to get the consistency you prefer)
2 tbsp Vegetable Oil plus extra for frying
Method
Sift flour into a large mixing bowl and add the salt.
In a glass jug, mix the No Egg with 6 tbsp water and whisk with a fork until combined and slightly frothy.
Add the soya milk, water and oil to the jug and mix well.
Pour the liquid into the flour mixture and whisk thoroughly. I like to use an electric whisk for this! Keep whisking until all the lumps are gone and you have a nice smooth batter.
Heat a small frying pan to a medium/high setting and add a tiny amount of oil.
Add 1/6 to 1/8 of the mixture at a time to your frying pan depending on how big you want your pancakes to be and fry until the edges curl up.
Using a spatula, loosen the bottom and show off your Pancake chef skills by flippng your pancake over to cook the other side.
Remove and place on a warmed plate and repeat until all pancakes are done.
Enjoy with your fave vegan toppings.
I like the classic lemon juice and sugar, but vegan chocolate spread comes a close second!
